Christmas Cookies

If cookies are part of Christmas, then baking is part of Advent. If you think of baking as work, it's better not to do it. Hopefully you enjoy baking as much as we do, because tasty low-carb baked goods are hard to find in stores. And Christmas cookies naturally lend themselves to low-carb baking. You'll just need to replace the sugar with artificial sweetener, and almond flour actually works better for Christmas baking than wheat flour. Even if I were to go back to eating carbs, I would still use…

Swiss Brownies

In my opinion, brownies are the most delicious "calorie bombs" out there! Last week, in exchange for my stollen recipe, Dr. Kämmerer from Würzbug sent me a recipe for Swiss chocolate cake. Since I didn't have the right cake pan the first time I made the recipe, I used my silicone muffin molds instead. The result (totally unplanned!) was low-carb brownies, just as good as regular American brownies. The Swiss addition of cherry brandy gave them a special twist! 6 Brownies Batter: 200…

The First Ever Low-Carb Christmas Stollen

A real Christmas stollen requires a heavy dough. Since yeast must have carbohydrates to work, we'll use our tried and true trick for preparing low-carb dough once again. To start, mix approx. 30 g normal wheat flour with 4 packets of dry yeast. After adding 300 ml_(1 1/2cup) warm milk and stirring thoroughly, place the mixture in the oven at 120° F ( 50° C) for half an hour and let the yeast do its work. In the meantime measure out 600 g_(24 oz) almond flour, 200 g_(8 oz) gluten, and 200 g_(8 oz)…

Low-Carb Candied Fruit

Candying is a lengthy process. The idea is to remove the liquid from fruit and replace it with large amounts of sugar. This also makes the candied fruit keep well.We didn't use sugar, of course, but our low-carb substitute erythritol (sold as Sukrin, Erythritol, Sucolin, or Xucker Light). The first problem is that erythritol isn't cheap, and for candying you'll need a relatively large amount of it. To make one batch we needed about 1 kg_(2 pound) of Xucker Light. At a price of up to 20 € per kg,…

Christmas Stollen

In Germany Christmas means stollen, a traditional spiced fruit cake. Since my childhood, when my family would receive two or three stollen as gifts each December (in exchange for a package of coffee or chocolate), I only start to feel like it's Christmas when the stollen is cut. I haven't found any really good low-carb recipes for Christmas stollen online. So I'm happy to announce that Delicious Low Carb is presenting the world's first fully-functioning low-carb stollen recipe. I have to admit…

Vanilla Crescent Cookies

The easiest low-carb Christmas cookies are these vanilla crescents, since the original version uses lots of almonds (which are naturally low in carbs). They're easy to make and don't require special baking skills. This is especially true because of the shapes, since most of us practiced rolling little sausage shapes out of clay or play dough when we were kids! Vanilla Crescents: 3 cookie sheets 200 g (8 oz)almonds, finely grated 200 g (8 oz)almond flour 100 g_(4 oz)gluten 250 g_(10…

Almond Tree Cake

Baumkuchen, or "tree cake," is a classic German dessert. It's easy to make but infamous for its calories. Since we're not worried about calories as long as there are no carbs, we can snack on it with enthusiasm and pleasure. We used almond flour for the batter and decorated the cake with almond brittle, so we've named our version "almond tree cake". Almond Tree Cake Dough: 250 g_(10 oz)almond flour (de-oiled) 125 gground almonds 150 g_(6 oz)gluten 250 g_(10 oz)butter 3 dspsweetener 6…

The Muesli Man

Muesli isn't just for hippies and "crunchy" types anymore. It fills the cereal aisle in the grocery store and is often considered a staple of a healthy diet. And now, the bad news: muesli does not fit into a low-carb diet! Processed cereals usually contain lots of sugar. Even if you make your own at home, oats, barley, spelt, and rye just have too many carbs. Muesli to serve 2: 250 g_(10 oz)yogurt 100 g_(4 oz)crushed flaxseed 250 g_(10 oz)pureed berries 50 g_(2 oz)chopped or…

The Queen of Desserts

In our opinion, the queen of desserts is creme brulee: rich, warm egg cream with orange zest, real vanilla, and of course a crunchy caramel crust. It's hard to imagine a more luxurious ending to a fancy dinner. Although we made an exception to our low-carb rules at Christmas and used a little sugar for the caramelized crust, we have since found a solution. Sukrin is a sugar alcohol that consists of 100% carbohydrates, but the body can't process it and it won't stimulate insulin production. Although…

Fruit Pie

We'll once again use our "all-purpose" dough to make the crust for our fruit pie. Knead almond flour, gluten, butter, 1 dsp sweetener, and 6 tbsp water into a homogeneous dough. Grease a Springform pan with butter and firmly press the dough onto the pan's base (1/2 of dough) and sides (1/3 of dough). The layer on the base should be about as thick as a woman's finger. The dough on the sides should be about half as thick. Save the remaining dough to make the lattice crust on top of the pie. Fruit…
