Blackberry-Michael

For a long time my wife has been asking me to make a Kirschmichel, one of her favorite treats from childhood. She raves about how the cherries were baked together with the batter, making the dessert taste wonderfully juicy and fruity.Literally translated, Kirschmichel means "Cherry-Michael". So what's a michael? It's a dessert that falls somewhere between a souffle and a cake. When my wife's mother made them, the michaels were always eaten while they were still warm. When we researched how many carbs…

Chocolate Hazelnut Bars

These chocolate hazelnut cookies are popular in Germany, where they're known as Nussecken. The basic idea is a tasty shortcrust pastry with caramelized almonds on top. The edges tend to crumble, so it's customary to dip the cut edges into chocolate. This stops the crumbling and makes the edges look tidy. Here's an easy low-carb version of this German favorite: Chocolate Hazelnut Bars Dough: 250 g_(10 oz)butter 250 g_(10 oz)almond flour 125 ggluten 100 g_(4 oz)ground hazelnuts 1…

Fruit Pie

We'll once again use our "all-purpose" dough to make the crust for our fruit pie. Knead almond flour, gluten, butter, 1 dsp sweetener, and 6 tbsp water into a homogeneous dough. Grease a Springform pan with butter and firmly press the dough onto the pan's base (1/2 of dough) and sides (1/3 of dough). The layer on the base should be about as thick as a woman's finger. The dough on the sides should be about half as thick. Save the remaining dough to make the lattice crust on top of the pie. Fruit…

Schepp-Kreppel Pancakes

You're probably wondering what this funny-sounding name means. In Germany, "Kreppel" is a nickname for people from Berlin. People from the Hesse region (where these pancakes are a specialty) claim that the "Kreppel" can't get the recipe right, so all they can manage is a "schepp" (phony) version. Another explanation is that "schepp" comes from the word for "to ladle". Scheppkreppel are yeast pancakes that you form by ladling batter into the pan! I decided to try a low-carb version of this…

Asparagus Tart

My wife and I love asparagus. When it's available in the springtime, we eat some almost every week. Of course, being a low-carb fan raises the question: how should we prepare it? Last year we prepared Jerusalem artichokes more often, but this year we've focused on asparagus - sometimes with a minute steak, always with homemade Hollandaise sauce, but even asparagus by itself is satisfying! Last week we wanted a little more variety, so I came up with the idea of an asparagus tart. Unfortunately…

Raspberry Gateau

At Easter we had company: a good friend who, like us, is a "foodie". Naturally, I had a lot of fun planning the menu. There was venison, salad, dumplings, homemade red cabbage. All low-carb, of course! As we were starting home from the farmers' market, loaded down with ingredients, I noticed a fruit stand selling the first raspberries of the year at a very reasonable price. I immediately thought of trying to make my mother's raspberry cream cake. My mother is a great cake and pie baker whose skill…

Wild Boar with Dumplings

Christmas is drawing near, and as you probably know from reading Delicious Low Carb, this means that we'll soon have guests and a festive menu. We decided to use wild game this year, and last Sunday was our first attempt. A good roast needs dumplings to go with it, so I tried a few popular recipes from the Internet. I didn't think liver dumplings would be appropriate and I was unimpressed by my first attempt with tofu dumplings. Tofu just tastes bland, and the dumplings weren't firm enough. Then…

"Potato" Salad

"The fattest farmer eats the most potatoes." At least, that's how it went with the farmers of old. Since we didn't want to give up the wonderful Upper Hessian potato salad we grew up with, we've devised a tasty and very similar salad - with turnips! At this year's New Year's Eve party, we put a bowl of this salad on the buffet without saying anything. The experiment was a success. It was one of the only salads to be eaten up entirely (which speaks for itself). While we were eating some, a…

Potato Pancakes

One of the most exciting low-carb recipes is potato pancakes (also known as latkes). I had to give them up for a long time, since my wife didn't like them. When I read this recipe, I had to try it. Since then, I've been making them regularly. Once you've tasted them, you'll never want potato pancakes made from potatoes again. If you're not already skeptical_(and I was), the basis for our pancakes is sauerkraut. To serve 4: 500 g_(1 Pound)sauerkraut 1egg 1onion (medium-sized) 50 g_(2oz)gluten 1/2…
